I'm trying to setup a track with just voice. When I hit a key on the keyboard, I hear the voice, plus a piano note. How do I change the sound to be JUST the voice?

Go to the Options Menu>MIDI Hardware and make sure that No MIDI is selected for the Sync Out Port. It sounds like it may be routing your MIDI signal to the Microsoft GS Wavetable Synth.
