Trying to get used to the new look...

The kHz is selectable, but the bit-depth is not?

Is a FULL (not an overview) user-manual available for the mixer?

The bit depth is set in your audio application, not from the Delta's control panel. There only documentation available for the new Delta Control Panel is this FAQ:
